My Top 5 One Pot Vanlife Meals

This is my go to meal when I’m tired, hungry, and cold. In fact, I’ve probably been eating this gem at least once per week for almost ten years - wow, even I’m shocked by that.
Serving Tip - Include a side of chopped salad and add a spoonful of hummus on the curry when ready to serve!
2. One Pot Lentil Lasagne

Who knew you could make lasagna in a saucepan?! It doesn’t quite look the same but by golly does it taste it!
Serving Tip - Serve with vegan sour cream and sprinkle some pine nuts on top.
3. Coconut, Lime, Black Bean Curry

One of those rare meals that tastes decadent but it’s actually really healthy (ok, the coconut milk is a bit rich but other than that it’s super nutritious and delicious!).
Serving Tip - If you have a couple of leftover limes squeeze the juice of one lime into each glass, add a teaspoon of agave nectar, and top up with sparkling water for a tropical beverage to accompany your fancy pants meal!
4. Thai Green Noodles

When I feel as though we’re not getting enough veggies but I fancy more than crudites this is my fave solution, I adjust the recipe and add tons of veggies including cauliflower, broccoli, and sugar snap peas. Then add just one small serving of rice noodles.
Serving Tip - This one is great to make extra of for lunch leftovers, the flavor builds up overnight and is even tastier the next day, even when served cold!
5. Rice Pudding

What recipe blog post would be complete without dessert?! This recipe was an accidental find when having lunch with the BF’s 93yr old Grandma in a little pub in England, and here’s a clue as to how good it was - my lovely boyfriend ate two helpings, and then wanted more!
Serving Tip - We skip the pineapple and add a dollop of raspberry coulis on top, it makes this dessert go from tasty to mind-blowingly delicious.
